  • 1 tbsp olive oil
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 lbs ground beef
  • ¾ cup Italian-style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 2 tbsp tomato paste
  • Salt and black pepper to taste
  • Fresh parsley, chopped
  • Slices of deli chicken
  • Fresh basil leaves
  • Shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté the onion and red bell pepper until soft; add garlic and cook until fragrant.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, sautéed vegetables, salt, black pepper, and parsley. Mix until just combined.
  4. Lay out parchment paper and shape the meat mixture into an 8"x15" rectangle. Layer deli chicken slices, basil leaves, and shredded mozzarella on top.
  5. Roll the meatloaf using the parchment paper to guide you; seal the edges securely.
  6. Place on a baking sheet lined with parchment paper and bake for about 1 hour or until cooked through.
  7. Let rest for 10 minutes before slicing. Serve with marinara sauce over pasta or zucchini noodles.
