  • 1 cup finely chopped yellow onions
  • 1 cup diced red peppers
  • 1 cup sliced carrots
  • 1 cup diced celery
  • 1 (15-ounce) can of tomato sauce with no added sugar
  • 1 (15-ounce) can of diced fire-roasted tomatoes
  • 1 (15-ounce) can of black beans, rinsed and drained
  • 1 (15-ounce) can of kidney beans, rinsed and drained
  • 1 (15-ounce) can of pinto beans, rinsed and drained
  • 2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon mild chili seasoning
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh lime juice
  • 2 tablespoons optional hot sauce

Instructions

  1. Wash and chop all vegetables: finely chop the onions, dice the red peppers, slice the carrots, and dice the celery.
  2. In your slow cooker, combine chopped vegetables with tomato sauce and fire-roasted tomatoes.
  3. Add rinsed black beans, kidney beans, and pinto beans to the mixture.
  4. Season with kosher salt, garlic powder, cumin, mild chili seasoning, and smoked paprika; stir well.
  5. Cover and cook on low heat for 4 hours or high heat for about 2 hours.
  6. Stir in fresh lime juice before serving.
