  • 1 tablespoon olive oil
  • 3 tablespoons butter (divided)
  • 2 small zucchini (sliced)
  • Salt and black pepper to taste
  • 1 small yellow onion (diced)
  • 1 pound button mushrooms (cleaned)
  • 3 to 4 cloves garlic (minced)
  • 2 teaspoons fresh herbs (or 1 teaspoon dried)
  • ¼ cup vegetable broth
  • Chopped parsley and grated parmesan for garnish

Instructions

  1. Heat olive oil and half a tablespoon of butter in a large skillet over medium-high heat.
  2. Add zucchini slices, season with salt and pepper, and cook for about 3 to 4 minutes until tender. Remove from the skillet.
  3. In the same skillet, melt the remaining butter and add diced onions; cook for about 2 minutes.
  4. Stir in the mushrooms and cook until browned, approximately 5 to 7 minutes.
  5. Add minced garlic and herbs; sauté for an additional 20 seconds until fragrant.
  6. Return the zucchini to the skillet and mix well; heat through for about a minute.
  7. Pour in vegetable broth; simmer for an additional 2 minutes to meld flavors.
  8. Adjust seasoning if necessary, then garnish with parsley and parmesan before serving.
