  • 1 medium onion (diced)
  • 4 cloves garlic (minced)
  • 2 stalks celery (diced)
  • 2 medium carrots (diced)
  • 2 medium zucchini (diced)
  • 28 oz diced tomatoes
  • 6 cups chicken broth
  • 15 oz dark red kidney beans (drained & rinsed)
  • 15 oz white cannellini beans (drained & rinsed)
  • 1 cup ditalini pasta

Instructions

  1. Combine all ingredients except the pasta in your slow cooker. Stir well and season with salt and pepper to taste.
  2. Cover and cook on LOW for 6 hours or HIGH for 4 hours, allowing flavors to develop.
  3. About 30 minutes before serving, add the ditalini pasta and cover until cooked through.
  4. Serve warm, garnished with optional parmesan cheese and fresh parsley.
