  • 6 cloves garlic, halved
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh oregano, chopped
  • 1 tablespoon coarse sea salt
  • 1 teaspoon black pepper
  • 2 large onions, sliced (for caramelizing)
  • 2 tablespoons olive oil (for caramelizing)
  • Honey (for glazing)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Pat the lamb shoulder dry and rub with salt and pepper. Place garlic around the lamb in a roasting pan.
