  • 4 Persian cucumbers (or 1 English cucumber)
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Wash and dry cucumbers; chop in half lengthwise and smash gently to break them up. Cut into 1-inch pieces.
  2. Dice the avocado and add it to the bowl with smashed cucumbers.
  3. Stir in feta cheese, pistachios, dill, and chives.
  4. Whisk together dressing ingredients (olive oil, lemon juice, mustard, honey, garlic). Pour over salad and toss gently.
  5. Serve immediately or refrigerate briefly before serving.
