  • 1 medium onion, diced
  • 1 medium red bell pepper, chopped
  • 34 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Pinch of red pepper flakes
  • Salt and black pepper to taste
  • 1 1/2 cups white rice, uncooked
  • 1 1/4 cups vegetable broth (or more if needed)
  • 1 1/4 cups salsa
  • 1 (15 oz) can kidney beans, drained and rinsed
  • Optional: 1/2 cup green olives, halved

Instructions

  1. Soak the rice in cold water for at least 10 minutes; drain.
  2. In a large skillet or pot over medium heat, sauté the onion and bell pepper in oil until softened.
  3. Add garlic and spices; cook for an additional minute.
  4. Stir in soaked rice, salsa, and vegetable broth; bring to a boil.
  5. Cover tightly, reduce heat to low, and simmer for about 15–20 minutes until rice is cooked.
  6. Remove from heat, stir in kidney beans and olives if using, adjust seasonings as needed, and garnish with fresh herbs before serving.
