  • 1 red bell pepper, sliced into strips
  • 1 medium onion, sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/2 tsp crushed red chili flakes, adjust to spice level
  • 3 tbsp soy sauce
  • 1 tbsp plant-based alternative to oyster sauce
  • 1 tsp sesame oil
  • 1 tsp cornstarch mixed with 2 tbsp water, optional, for thickening
  • 1 cup uncooked jasmine rice
  • 3 cups water
  • Pinch of salt

Instructions

  1. Cook jasmine rice in salted water until fluffy; keep warm.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Sauté minced garlic and ginger until fragrant.
  4. Add chicken pieces and cook until golden brown on all sides.
  5. Stir in sliced onions and bell peppers until slightly softened.
  6. Mix in soy sauce, plant-based oyster sauce, sesame oil, chili flakes, and cornstarch slurry if using; stir-fry for an additional 2-3 minutes.
  7. Serve hot over jasmine rice.
