  • 3 large chicken breasts, diced
  • ½ cup soy sauce
  • ½ cup honey
  • ¼ cup rice vinegar
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • 3 cloves garlic, minced
  • 2 tbsp Sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder + 2 tbsp water
  • ½ cup mayonnaise
  • 1 tbsp Sriracha for spicy mayo
  • 23 tbsp water for spicy mayo
  • sesame seeds for garnish

Instructions

  1. Cook the rice: In a large pot, bring 4 cups of water to boil. Add rice, reduce heat, cover, and simmer for 18-20 minutes.
  2. Season the chicken: In a bowl, mix olive oil and spices; coat chicken pieces.
  3. Cook chicken: Preheat air fryer to 375°F. Cook seasoned chicken in batches for 15-20 minutes until fully cooked.
  4. Make the sauce: Whisk together soy sauce, honey, vinegar, garlic, Sriracha, sesame oil, ginger; add arrowroot slurry to thicken.
  5. Combine: Fluff rice with a fork; layer chicken on top and drizzle with sauce.
  6. Prepare spicy mayo: Mix mayonnaise with Sriracha and water until desired consistency is reached.
  7. Serve: Spoon into bowls and garnish with sesame seeds.
