  • 1 cup homogenized milk

  • 1 cup dark brown sugar
  • 2 eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups unbleached all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • Sea salt flakes (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. In a bowl, combine chopped dates and baking soda. Scald the milk in a saucepan and pour over the date mixture; let it cool for about 15 minutes.
  3. Mix flour, baking powder, and salt in another bowl. In a food processor, blend eggs, dark brown sugar, butter, and vanilla until smooth. Gradually add dry ingredients and then the soaked date mixture.
  4. Pour the batter into the prepared dish and bake for about 30 minutes until golden.
  5. For the caramel sauce, melt butter in a saucepan; stir in brown sugar and salt until dissolved. Add cream and simmer until thickened.
  6. Once baked, poke holes in the cake and pour one-third of the caramel sauce over it. Let it rest for about 15 minutes before serving with whipped cream.
