  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon, optional
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/4 cup honey or maple syrup, optional

Instructions

  1. In a saucepan, combine strawberries, sugar or honey, lemon juice, cornstarch, and vanilla; cook until thickened.
  2. Preheat oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
  3. Mix oats, flour, brown sugar, baking powder, salt, and cinnamon in a bowl.
  4. Cut cold butter into the dry mixture until crumbly.
  5. Stir in vanilla and optional sweetener.
  6. Press two-thirds of the mixture into the pan as the base; add strawberry filling evenly on top.
  7. Sprinkle remaining crumble over filling and bake for 35–40 minutes until golden brown.
  8. Let cool completely before slicing.
