1 quart (16 ounces) ripe strawberries, washed, hulled, and sliced
1 tablespoon lemon juice
⅓ to ½ cup (70 – 100 grams) sugar (adjust based on strawberry sweetness)
1 tablespoon quick-cooking tapioca or cornstarch
Pinch of salt
Instructions
In a blender, combine ½ cup of sliced strawberries with lemon juice and ½ cup water (omit water if using cornstarch). Blend until smooth.
In a pot, mix the sugar with quick-cooking tapioca (or cornstarch) and a pinch of salt. Stir well. Add the blended strawberry juice and heat over medium until boiling. Reduce heat and simmer for about 5 minutes until thickened (skip simmering if using cornstarch).
Stir in the remaining sliced strawberries once thickened. Allow the mixture to return to a simmer before removing from heat.
Transfer to a wide container to cool completely before storing in an airtight jar in the refrigerator or freezer.
