  • 1 cup unsalted butter (room temperature)
  • 3 cups granulated sugar
  • 5 large eggs (room temperature)
  • 3 cups all-purpose flour (sifted)
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 2 tsp strawberry extract (optional)
  • 1/2 tsp red food coloring (optional)
  • 2 tbsp strawberry puree (reserved from the cake)
  • 2 cups powdered sugar
  • 1 tsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt or loaf pan.
  2. Wash strawberries and puree half for the glaze; reserve some for the batter.
  3. Cream butter and sugar in a mixing bowl until light and fluffy. Add eggs one at a time, followed by buttermilk, vanilla extract, and optional strawberry extract.
  4. In another bowl, whisk together flour, salt, and baking soda. Gradually combine with wet ingredients until just mixed.
  5. Fold in reserved strawberry puree gently into the batter.
  6. Pour batter into the prepared pan and bake for approximately 70 minutes or until a toothpick comes out clean.
  7. Cool for about 15 minutes before transferring to a wire rack.
  8. Prepare the glaze by mixing powdered sugar with strawberry puree and lemon juice until smooth; drizzle over cooled cake.
