  • 4 large Portobello mushrooms
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • ½ cup cherry tomatoes, diced
  • ¼ cup breadcrumbs
  • ¼ cup Parmesan cheese, grated
  • ½ cup mozzarella cheese, shredded
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking sheet.
  2. Brush both sides of the mushrooms with olive oil and place them gill-side up on the baking sheet. Season with salt and pepper.
  3. In a skillet over medium heat, sauté the minced garlic in olive oil for about 1 minute until fragrant. Add the chopped spinach and cook until wilted.
  4. Remove from heat and mix in cherry tomatoes, breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
  5. Spoon the filling evenly into each mushroom cap and sprinkle shredded mozzarella on top.
  6. Bake for 15–18 minutes or until mushrooms are tender and cheese is melted.
