  • 1/2 cup sweet chili sauce
  • Juice from 1 lime

  2. Preheat the grill to medium-high heat and grease the grates. Grill chicken for 4-5 minutes per side until cooked through (internal temperature should reach 165°F). Let rest for 5 minutes before slicing.
  3. While the chicken rests, heat coconut oil in a skillet over medium-high heat. Sauté cauliflower rice seasoned with salt and pepper until tender (5-7 minutes). Stir in remaining lime juice and coconut milk; mix in chopped cilantro.
