  • 1 tbsp olive oil
  • 1 shallot, finely chopped
  • 2 cups mushrooms (Portobello, Cremini, or Shiitake), sliced
  • 1 tsp thyme (fresh or dried)
  • 4 slices Swiss cheese (or Gruyère)
  • 8 slices bread (Rye, Sourdough, or Artisan)

Instructions

  1. Heat a skillet over medium heat and add the mushrooms. Cook for 5–7 minutes until moisture evaporates.
  2. Stir in butter, olive oil, and shallots; cook for another 5 minutes until golden.
  3. Add thyme, salt, and pepper. Set aside.
  4. Butter one side of each slice of bread. Layer cheese and mushroom mixture on unbuttered sides before topping with another slice of cheese and bread.
  5. Grill in the skillet for 2–3 minutes per side until golden brown and cheese is melted.
