  • 1 lb lean ground beef
  • 1 onion, diced
  • 14.5 oz can diced tomatoes
  • 18 oz can black beans, drained and rinsed
  • 15 oz can corn, drained and rinsed
  • 2 cups cooked brown rice
  • Shredded cheddar jack cheese
  • Taco seasoning packet

Instructions

  1. Preheat oven to 350°F.
  2. Halve the bell peppers and remove seeds.
  3. Bake halved peppers in a dish for 5 minutes.
  4. Sauté onion in olive oil until soft; add ground beef and cook until browned.
  5. Stir in tomatoes, beans, corn, cooked rice, and taco seasoning; mix thoroughly.
  6. Fill each pepper with the mixture.
  7. Cover with foil and bake for 10 minutes; uncover, top with cheese, and bake for an additional 15 minutes.
