  • 190g graham cracker crumbs
  • 35g sugar (about 3 tbsp)
  • 75g melted unsalted butter (about 5 tbsp)
  • 32 oz full-fat cream cheese (4 8oz blocks), at room temperature
  • 325g granulated sugar (1 ½ cups)
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs, room temperature
  • 120g heavy cream (½ cup), room temperature
  • 240g sour cream (1 cup), room temperature
  • 1 tbsp cornstarch
  • 23 tablespoon lemon juice
  • 1 lb strawberries, roughly chopped in large chunks
  • 55g sugar (1/4 cup)
  • 1 tsp cornstarch
  • Juice of 1/2 a lemon
  • Fresh strawberries for decoration (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan. Bake for 10 minutes until golden.
  2. Beat together cream cheese and sugar until smooth. Add salt, vanilla essence, then eggs one at a time. Mix in sour cream and heavy cream until combined. Stir in cornstarch and lemon juice.
  3. Pour filling over crust and bake for 60-75 minutes until set but slightly jiggly in the center. Cool in the oven with the door ajar for an hour.
  4. For the compote, cook chopped strawberries with sugar until soft. Mix cornstarch with water; add to strawberries along with lemon juice until thickened.
  5. Once cooled, remove cheesecake from pan, top with strawberry compote, and garnish with fresh strawberries if desired.
