  • 35 chocolate creme cookies
  • 5 tbsp unsalted butter, melted
  • 24 oz cream cheese, room temperature
  • 8 oz mascarpone cheese, room temperature
  • 1 ½ cups granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs, room temperature
  • ½ cup heavy cream
  • 1 cup sour cream
  • 1 tbsp cornstarch, sifted
  • 12 ladyfinger biscuits
  • ½ cup strong black coffee
  • 4 oz mascarpone cheese, cold
  • 24 tbsp granulated sugar
  • 1 tsp instant coffee dissolved in 1 tsp water
  • 1 cup heavy whipping cream, chilled
  • 2 tbsp cocoa powder, to dust

Instructions

  1. Preheat the oven to 350°F (175°C). Butter the base of a 10" springform pan.
  2. In a food processor, blend the chocolate cookies and melted butter until crumbly. Press into the springform pan and bake for 7–8 minutes; let cool.
  3. Lower the oven to 320°F (160°C). Beat cream cheese, mascarpone, sugar, vanilla, and salt until smooth. Add eggs one at a time; mix gently.
  4. Incorporate heavy cream, sour cream, and sifted cornstarch until smooth. Pour half over crust.
  5. Quickly dip ladyfingers in coffee and layer over batter. Add remaining batter and set in a water bath in the oven. Bake for 80 minutes.
  6. Cool at room temperature then refrigerate overnight.
  7. Prepare topping by whisking mascarpone with sugar and dissolved coffee; fold in whipped cream.
  8. Serve chilled with cocoa dusting.
