  • 1/2 cup dry quinoa
  • 3/4 cup water
  • 23 cups chopped tomatoes
  • 15 oz can chickpeas (drained and rinsed)
  • 1/4 cup chopped green onion
  • 1/4 cup fresh lime juice
  • 2 TBSP avocado oil
  • 1 clove garlic (minced)
  • 1 TBSP fresh chopped parsley
  • 1/2 tsp ground cumin
  • 1/4 tsp sea salt
  • 1/8 tsp pepper
  • Additional fresh chopped parsley (to taste)

Instructions

  1. Rinse the quinoa under cold water using a mesh strainer. In a small pot over medium heat, lightly toast the quinoa for about 3 minutes.
  2. Add water to the pot and bring to a boil. Reduce heat to low and simmer covered for 12-13 minutes until fluffy.
  3. While the quinoa cooks, chop tomatoes and green onions.
  4. Whisk together lime juice, avocado oil, garlic, parsley, cumin, salt, and pepper in a bowl.
  5. Fluff cooked quinoa with a fork and let cool slightly before combining with tomatoes, chickpeas, green onions, and half of the dressing. Toss well and serve with additional dressing as desired.
