  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 12 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder (or 4 cloves minced garlic)
  • ¼ tsp dried thyme
  • ½1 tsp red chili flakes (optional)
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese (medium or sharp)

Instructions

  1. In a large skillet over medium heat, cook turkey bacon until crispy; chop into bite-sized pieces.
  2. In a large pot, heat butter or olive oil over medium heat; sauté onions and carrots until tender.
  3. Add chicken broth and bring to a simmer for about 5 minutes.
  4. Stir in heavy cream, garlic powder, salt, pepper, thyme, and optional chili flakes. Gradually add cheese until melted.
  5. Add gnocchi and cook until they float to the surface (about 2 minutes).
  6. Stir in chopped turkey bacon before serving hot.
