  • 1 (15 ounce) can plus 1 cup organic pumpkin puree
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped fresh sage
  • Fried sage leaves for garnish

Instructions

  1. Prepare the mixture: In a large mixing bowl, combine fresh breadcrumbs and milk. Let sit for 3 minutes before adding onion, garlic, sage, parsley, Italian seasoning, parmesan, and egg. Mix well.
  2. Combine ground turkey: Gently mix in the ground turkey along with salt and pepper until just combined.
  3. Form meatballs: Use a 2-tablespoon scoop to portion meatballs onto a parchment-lined platter and freeze for 20–25 minutes.
  4. Cook meatballs: Heat oil in a skillet over medium-high heat. Fry meatballs until browned on all sides (about 10 minutes).
  5. Make the sauce: Sauté onion in ghee/butter; stir in garlic and Italian seasoning before whisking in pumpkin puree, chicken stock, salt, pepper, heavy cream, and parmesan cheese.
  6. Combine: Add cooked meatballs to the sauce and let simmer briefly before serving.
