  • 9 oz vegan beef or portobello mushrooms
  • 1 large onion, diced
  • 3 large carrots, chopped
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 330 ml Guinness
  • 4 cups vegetable stock
  • 4 large potatoes, cubed
  • Seasonal veggies (e.g., rutabaga/swede, cabbage)
  • Soy sauce, salt, pepper, sugar, bay leaves, thyme, rosemary

Instructions

  1. Heat oil in a Dutch oven over high heat.
  2. Sear the vegan beef/mushrooms until golden brown; remove and set aside.
  3. Add onions, carrots, and celery; sauté until softened.
  4. Stir in garlic and cook briefly before adding flour.
  5. Gradually pour in Guinness while stirring to prevent lumps.
  6. Add remaining ingredients: vegetables, stock, soy sauce, and seasonings; stir well.
  7. Bring to a boil then reduce heat to simmer uncovered for about 45 minutes until the veggies are tender.
  8. Return seared vegan beef/mushrooms to the pot for the last ten minutes of cooking.
  9. Serve hot with desired accompaniments.
