  • 2 Zucchini, grated
  • 1 Carrot, grated
  • 1/2 Red Capsicum/Bell Pepper, diced
  • 2 tablespoons Olive Oil
  • 1 Brown Onion, diced
  • 2 Turkey Bacon Slices, diced
  • 5 Eggs, lightly whisked
  • 1/4 cup Milk
  • 1 cup Self-Raising Flour
  • 1 1/4 cup Grated Cheddar Cheese

Instructions

  1. Preheat your oven to 180C (350F) and line a square baking dish (9 x 9 in).
  2. Grate zucchini and carrot into a colander, sprinkle with salt, and let sit for 10 minutes.
  3. In a frying pan over medium heat, sauté the onion and turkey bacon in olive oil until golden brown. Allow to cool slightly.
  4. Squeeze excess moisture from zucchini and carrot. In a large bowl, combine them with bell pepper, cooked onion and turkey bacon, cheddar cheese (reserve some for topping), flour, eggs, milk, remaining olive oil, salt, and pepper.
  5. Pour the mixture into the prepared baking dish. Sprinkle reserved cheese on top and bake for 35-40 minutes or until firm.
