  • 1 ½ cups (300g) granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini (1 large or 2 small zucchinis)
  • 35 tablespoons (15-75ml) water
  • ½ cup chopped walnuts (optional)
  • 3 tablespoons (15g) unsweetened cocoa powder (for frosting)
  • ¼ cup (59ml) unsalted butter (melted)
  • 2 cups powdered sugar
  • ¼ cup (59ml) milk
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F and line a 9×13" baking pan with foil, then spray with cooking spray.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix vegetable oil, sugar, and vanilla until combined.
  4. Stir in dry ingredients and fold in shredded zucchini. Add water if needed for consistency.
  5. Spread batter in the prepared pan and bake for 25-30 minutes until set.
  6. For frosting, whisk melted butter, cocoa powder, powdered sugar, milk, and vanilla until smooth; spread over cooled brownies.
