  • 1 cup Panko bread crumbs

  • 3 tbsp canola oil (for cooking)

  1. Grate zucchini using a box grater and squeeze out excess moisture using a mesh bag or cheesecloth.
  2. In a mixing bowl, combine the squeezed zucchini with Panko bread crumbs, eggs, cheeses, minced garlic, salt, and pepper. Mix until fully incorporated.
  3. Heat canola oil in a non-stick frying pan over medium heat.
  4. Using an ice cream scoop, portion the mixture into the hot oil. Flatten slightly with your hands.
  5. Cook each fritter for 4-6 minutes per side or until golden brown.
