  • 4 medium Zucchini
  • 1 Bell Pepper (chopped)
  • 1 Yellow Onion (chopped)
  • 4 cloves Garlic (minced)
  • 1 lb. Ground Turkey
  • 2 cups Marinara Sauce
  • 2 cups Mozzarella Cheese (shredded)
  • 2 Eggs
  • 1 Tablespoon Olive Oil
  • 1/4 cup Parmesan Cheese (grated)
  • 1 Tablespoon Italian Seasoning (divided)
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Onion Powder

Instructions

  1. Preheat your oven to 400°F.
  2. Grate the zucchini and let it drain in a colander to remove excess moisture.
  3. In a mixing bowl, combine drained zucchini, eggs, Parmesan cheese, black pepper, onion powder, and a teaspoon of Italian seasoning. Press into a greased 9×13 baking pan and bake for 20 minutes.
  4. In a skillet, heat olive oil over medium heat. Sauté onion and bell pepper until soft; add minced garlic and cook for an additional minute.
  5. Add ground turkey to the skillet and cook until no longer pink. Stir in marinara sauce and remaining Italian seasoning.
  6. Spread the turkey mixture over the baked zucchini crust, top with mozzarella cheese, and bake for another 20 minutes until bubbly.
