  • 2 zucchini squash (sliced thin)
  • 45 tomatoes (sliced)
  • 11/2 cups shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 tablespoons butter (melted)
  • 3/4 cup fine bread crumbs

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×9 baking dish.
  2. In a bowl, mix the mozzarella, Parmesan, garlic powder, salt, pepper, basil, and oregano.
  3. Layer sliced zucchini in the dish followed by a portion of the cheese mixture. Repeat with sliced tomatoes and remaining cheese mixture until all are used.
  4. Combine melted butter with bread crumbs and sprinkle over the top.
  5. Bake covered with foil for 25 minutes, then uncover and bake for an additional 20 minutes until golden brown.
